Healthy Breakfast Cookies

My relationship with oatmeal has been a rocky one. I was a cream of wheat kid. Just like a kid can either prefer N*SYNC or Backstreet Boys. You either liked cream of wheat or oatmeal. I loooooved cinnamon cream of wheat and Backstreet Boys. (Particularly A.J. and Kevin. I know, I’m so punk.) For reasons unbeknownst to me, people basically tried to force feed me oatmeal all of my life. Okay, they didn’t like hold me down and force me. But our house in the morning, EVERY morning, was a lot like the scene at the beginning of Home Alone, but we weren’t going on a fun family trip. We were going to school. Ick. So, because of the craziness, mom either brought a pack of pop-tarts in the car, or brushed her teeth while not even remotely cautiously mixing instant oatmeal and water. Ick. Literally, every day I’d take a bite, make a funny face, do a weird lip movement tossing it around in my mouth like a 90 year old person does, and would then throw it away. Every. Day. And every day I’d say “I HAAAAAATE oatmeal mom.” And she’d say “Well, eat it. It’s good for you.”

I promise my childhood was a happy one. Lively and never a dull moment, yes. Unhappy? No. I was just fed slop in the morning, NBD.

Slop. That’s how I referred to instant oatmeal until about a year ago. Nothing crazy about the oatmeal changed. No one added magic fairy “Morgan Likey” dust to their oatmeal packs a year ago. I think my taste buds just had a talk and were like “it’s time to grow the eff up.” 26 years late.

I constantly saw variations of this witchcraft where you combine fruits and oatmeal and bake them in cookie form and it was supposed to be good. Nothing will ever taste as good as Subway’s oatmeal cookie. So, I’m being very honest here, because that is what you come here for. I think? Eh. But it does NOT taste like a Subway oatmeal cookie. But is it yummy? Yes. It is very yummy. Imagine a granola bar that is warm, HOT AND FRESH OUT THE KITCHEN. That’s what these cookies mean to me.

You will need:

2 cups of whole grain oats
2 very ripe bananas
1 teaspoon vanilla
1/2 cup applesauce
1/2 cup peanut butter
1/2 cup chocolate chips
1 teaspoon of ground cinnamon
A literal pinch of baking powder
2 packets of Truvia (or a few drops of liquid stevia)

Pre-heat oven to 350 degrees.

Now here is the fun part. Keep in mind I am kind of weird. You mash all of this stuff together with your hands. Or you can be civil and use a fancy Kitchenaid mixer of sorts. But, I think it’s fun to use your hands and it’s almost somewhat of an arm workout. (If you’re out of shape like me. Hah) Mix until VERY well blended. You can get intense and COMPLETELY mix it down to a dough in a mixer, I’m sure.

Spoon one little bit at a time, roll it around in your hand to create some shape, and flatten it out like a cookie. Place one by one on a greased baking sheet. Bake on 350 for 16-20 minutes.

My batch made 14 small cookies. They last about a week in an airtight container, so Mike and I ate two small cookies each morning.

These will definitely become a regular in our house. And I am SO glad oatmeal and I put our differences behind us so I can eat it ALL OF THE WAYS.

*Cool Hint: You can add WHATEVER you want to these. I think next time I would add some nuts of some kind. Or berries. Or both. MMMMM. Endless. Cookie. Possibilities.

This week’s menu and mini quiche!

I have so many things to share with you guys!

Mike and I had double date night with Jess and Brad last night. We got Mexican and then went to see Godzilla. IT WAS SO GOOD. Better than I thought it would be by far! I ate what I wanted to. I eat so healthy during the week, I don’t worry too much about the weekends.

Today we went to the mall. We ate at California Pizza Kitchen. I was craving their thai crunch salad. So Mike and I split that. Yum!

We stopped in H&M. Mike got some sessy new jeans. I didn’t find much I wanted. I’m so apprehensive buying clothes right now. I’m losing weight consistently so I don’t want to waste money on something that will only fit for 3 weeks. I stopped in bath and body works to get their new summer candles. Yay!

Our last stop was our weekly trip to Trader Joe’s. We got lots of goodies on the menu this week!

I wanted to show you guys how I keep my salad fresh for the week. Load up a few bags of salad mix in a giant Tupperware bowl then add a square of paper towel to the top. It soaks up excess moisture. Which leads to crisper lettuce!

I made mini quiche for our breakfast all week. So excited for them. We took a bite. Oh, so freaking good.

Mini Quiche!

You’ll need:
4 eggs
1/2 cup low fat milk
1/2 heavy whipping cream
1 pie crust (roll out, such as pillsbury)
A large handful of baby spinach
1 healing cup of cut up/diced ham (we used sandwich meat ham)
Roughly one cup of shredded cheese
Salt
Pepper

Preheat oven to 375 degrees.

Roll out the pie crust. Use the top of a cup to create circles in the dough.

Grease up your muffin pan really well. Make sure all of the sides are oiled as well. You can use Pam or any oil you have on hand. Press circles of dough into muffin pan, making sure it is all pressed down and into the sides.

In a bowl. Combine 4 eggs, 1/2 cup of low fat milk, 1/2 cup of heavy cream, salt and pepper. Whisk well.

Add baby spinach on top of pie crusts in pan. Then add chopped ham on top of spinach.

Lastly, add egg mixture to each muffin tin. Fill to where it is equal with the top of the crust. I used my 1/2 cup measurer so I didn’t make a mess.

Sprinkle cheese evenly onto all of the quiches.

Bake for 30 minutes. Pull them out and let them cool! Then pack them in plastic baggies for breakfasts or eat one right away like us!

Wild Eggs and a Weigh In

HAPPY FRIDAY!! woop woop!

I truly was nervous about today’s weigh in. It’s mother nature time of the month for me. And that usually does disastrous things to your body’s physical weight. And mind. And diet.

Image

But wow. I am so proud of myself. I’m tooting my own horn.

I LOST 3 POUNDS THIS WEEK!!

So, onward, I’d just love to be able to, at the very least, lose every time. Even if it is just a pound, I’ll take it!

I treated myself with a healthy version of my Wild Eggs favorite. Kalamity Katie’s Border Benedict.

Image

It usually comes with queso. I said no to queso. It was hard as hell to do that. I also got just egg whites. It also usually comes with potatoes. Which I switched out for fruit. Like I said, I’m in the zone!

we’ll touch base this weekend!

Have a good one!
