When I heard about mixing cola and pork tenderloin to create juicy pulled pork, I thought it had to be gross. Black magic.
But two years ago when we were throwing a big summer dinner party, I needed something to feed a lot of people and I winged it. Like, didn’t even know if it tasted good, I was desperate winged it. And boy was I glad. It was a huge hit. Melt in your mouth pulled pork that wasn’t too saucy.
Just right pulled pork.
It’s best for us to do this over night. It takes about 8 hours on low in the slow cooker. And since our days are more 9-10 hours, I didn’t want to risk over-doing it.
Things you will need:
-1 pork tenderloin (I’ve used the pre-seasoned ones from our Kroger and it turned out great. But this recipe is without it. Pre-seasoned just saves time.)
-salt and pepper
-One can of root beer (diet works just as well. I used half coke half diet root beer. Just felt like trying it. Came out the same.)
-your favorite BBQ sauce
Turn your slow cooker on low.
Coat the bottom in olive oil. Rub chili powder, salt and pepper into the entire pork tenderloin. Get it good and covered. Place the pork tenderloin into the slow cooker.
Pour in the can of root beer.
About 8 hours later, or in the morning, check the temperature of the pork. I moved to Europe apparently, but it should be about 145 degrees Fahrenheit.
With a big fork and a solid knife, shred the pork in the crock pot.
Once all of the pork is shredded, scoop out of the soda mixture into a big bowl. (As in, leave all of the soda in the crockpot to throw away.) Pour your favorite BBQ sauce on top and mix well to your desired sauciness. Mike wanted a more North Carolina tasting barbecue and I wanted mine a little sweeter so we split it in half.
Easy peezy. Lemon squeezy. Big time.
